Dom Pérignon produces only vintage Champagnes, both blanc and rosé, and offer a number of late release bottlings under their Oenothèque and Plénitude labels. Perfect Serve: The Dom Pérignon Rosé 2006 Champagne demands to be served alongside simple, authentic and traditional cuisine from the sunny southern Europe, originating from Italy, Spain or France. Subtly floral, with a fine frame of acidity driving this to the mouthwatering finish of smoky mineral and dried fruit. Very grippy and long finish and overall a very seductive and imposing champagne with all parts in place. The weather was mostly warm with little rain, however a heatwave in August followed by a cool and rainy September moderated initial anticipation. Although it took over ten years to reach the light of day, the colour of Dom Pérignon Rosé dares to express all the tension between youth and maturity, between exhibition and restraint. Almost more like a still burgundy than a champagne, although the finish has the liveliness one would expect of a sparkling wine, sorry, champagne! Underpinned with hints of biscuit and dried fruit, wild red berry confit, a touch of nougat and candied orange zest, pleasant Pinot spice. The wine displays all the aromatic nuances of Pinot Noir - raspberry, fig, strawberry and cherry - exacerbated by the delicacy, mineral elegance and light notes of chardonnay.Plenty of spice and black cherry hints on the palate with tropical fruit flavours on the mid-palate lingering long at the finish.
